How can we remain positive when surrounded by darkness?
Helen Keller, born in 1880 in Tuscumbia, Alabama, lost both her sight, hearing and ability to speak at 19 months due to a high fever. Despite these immense challenges, she learned to communicate with the help of her teacher, Anne Sullivan, mastering multiple languages and becoming the first deaf-blind person to earn a college degree. Keller became a renowned author, lecturer, and advocate for people with disabilities, as well as a vocal supporter of social justice causes such as women’s rights.

Deaf, blind and mute, Keller endured obstacles that many of us can hardly imagine. In her profound work, Optimism, she reveals her secret to happiness and challenges us to rethink how we respond to adversity. Imagine what it takes for a person with her limitations to view the world through a lens of hope rather than despair. Keller’s life is a testament to her philosophy: optimism is a conscious choice that requires effort, especially in the face of difficulty.
Keller’s optimism is grounded in her belief in human resilience, the goodness of the world and her faith in God. She acknowledges that pain and suffering are a part of life. Keller doesn’t deny the existence of hardship; rather, she accepts it as inevitable and then chooses to focus on how to overcome it. In her view, optimism is not the absence of struggle, but the determination to rise above it. What a powerful perspective!

Taste Your World Change – Sunshine Style
In the spirit of Helen Keller’s Optimism, let’s create something light, bright and full of sunshine—something that reflects the beauty of choosing joy even on the grayest of days. This Sunshine Cake is more than a treat. It’s a quiet celebration of resilience and radiance—just like a woman who learned to see the world’s wonder without ever opening her eyes.
Whether you share it over conversation with friends or savor it solo with a journal and a cup of tea, let this be your sweet reminder: even in the darkest seasons, there is always something worth celebrating.
Sunshine Cake
Ingredients:
• 1 ¼ cups cake flour
• 1 ¼ cups sugar (divided)
• 1 ½ cups egg whites (about 10–12 large egg whites)
• ½ teaspoon cream of tartar
• ¼ teaspoon salt
• 1 tablespoon lemon zest (from about 1 lemon)
• 2 teaspoons vanilla extract
• 2 teaspoons lemon extract or fresh lemon juice
• 6 egg yolks
• 1 tablespoon orange zest
• ¼ cup freshly squeezed orange juice
• Powdered sugar for dusting
Instructions:
Preheat Oven: Preheat your oven to 350°F (175°C). Do not grease the pan.
Beat Egg Whites: In a large bowl, beat the egg whites with cream of tartar and salt on medium speed until soft peaks form. Gradually add ½ cup of the sugar while beating until stiff peaks form. Set aside.
Mix Dry Ingredients: Sift together the cake flour and the remaining ¾ cup sugar. Sift the mixture 2 more times to ensure it’s light and airy.
Flavor the Batter: In a separate bowl, whisk the egg yolks, orange zest, and orange juice together until well combined.
Fold in Flour: Gently fold the sifted flour mixture into the egg whites, a little at a time, using a spatula. Be careful not to deflate the egg whites.
Incorporate Yolks: Gently fold the egg yolk mixture into the batter along with the lemon zest, vanilla, and lemon extract.
Bake the Cake: Pour the batter into an ungreased tube pan or angel food cake pan. Smooth the top and bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
Cool the Cake: Invert the pan to cool completely, allowing air to circulate. Once cooled, run a knife around the edges to release the cake.
Serve: Dust with powdered sugar before serving.
